There’s something about cold, rainy nights that require a serious fix. Last night, that fix came in the form of homemade hot chocolate*, popcorn, and Green Acres/Andy Griffith. My littlest sister was the only one in the house with me, and it was the opportune time to spend precious moments reconnecting with her.
I’m finally starting to realize that these moments won’t be around forever. She’s growing up. I’m preparing for college. Why do I continually take her, and all my sisters, for granted?
As I type this, the rain is pattering on my windowsill. The tree outside shakes with the ferocious wind that sprung up overnight. It’s truly acting like November now. I’m ready for work – just have to grab some breakfast before I leave. It’s not a morning I wish to go outside in, hence why I’m putting it off just a tad.
Tomorrow, I’ll be touring one college. Monday morning, I’ll leave for four days to visit another. I promise I’ll take pictures – it’s supposed to be beautiful there. You may or may not see anything happening on this blog over that time, depending on whether I take my computer with me or not.

*half a cup of cocoa powder to 3/4 cup of sugar ratio. I used vanilla sugar for extra deliciousness…

If you think pigs are disgusting, you probably haven’t see little pigs yet. They’re just old enough to fend for themselves, and ferociously cute. They haven’t learned the art of removing the pins in the fence in order to escape… yet. When they’re a bit bigger, they’ll be moved out to a bigger pasture. But till then? They’re perfectly content to snuggle up inside of a gigantic haybale and fall asleep.
I never thought I’d like pigs. But… you never know, do you?

Dear Cinderella,
Please don’t grow up so fast. You are gorgeous, and I’m so, so proud to be your big sister. You’re growing into a lovely young woman who has exceeding amounts of talent. I have so many memories of you in pigtails and overalls. I have many more of our childhood days playing dolls and house together. Please don’t grow up so fast. I feel as if one day I’ll close my eyes, and you’ll be all grown up on me. 
I love you, my little Cinderella.

There’s something about the fog that creates an eerie, ethereal feeling to these pictures. It’s that time before sunset where the air is chilly, and the dampness penetrates your very being. Watching the sunrise from our duck blind on the creek heightens the dampness, and leaves you waiting for the first rays of sun to poke over the horizon and warm the earth.

And this is how I spent the morning of my birthday – with my father, watching the sun rise on the creek. It was, in one word, stunning.

The rest of the day consisted of lots of food, being sung to, and shelving library books. (Love my job so much. I’m so very blessed.)

Now I sit in my bedroom, attempting to type while Opal purrs (and drools) all over me. Today kickstarted an extremely busy rest-of-the-week, mostly involving inordinate amounts of schoolwork as I try to prepare for my upcoming trip. But this evening, I’m trying not to think too much about the work ahead of me, and I’m just enjoying the moment.
I can’t quite wrap my head around being a year older. It’s even harder knowing that this might be the last year I’ll be home to celebrate it with my family as a result of impending college studies. What is this madness? Where did the time go?
Regardless, I’m grateful for this time – right now. I’m grateful for the trials the past year has tossed at me, not because they were easy to go through (on the contrary), but because they’ve challenged me and helped me to grow. What is that they say about praying for patience? They say that if you pray for patience, God will give you opportunities to be patient. The same with… any other fruit of the Spirit.

I’m grateful for the joys, the tears, the laughter, and the sadness. I’m grateful for my amazing family and friends who’ve stuck with me through it. I’m grateful for this time.. this moment, and for the opportunities presented to me.
Here’s to another year of growth and adventure…

Today was one of those days where the sky was brilliant. We’re almost at the height of our equinox – the leaves are growing more colorful by the day.

This is my lovely calender that I haven’t shown you all yet. It’s in German, which means it has German holidays on it, and the week starts with Monday instead of Sunday, like all European calenders. Awesome, no?

Now that it’s cool at nights, Opal sleeps on the pillow besides me at night. You know? I love having a cat that adores me. Because… I just do.

I made gingersnaps again today. Such an amazing feeling to work in the kitchen. I received multiple requests last time for the recipe – I’ve included it below.

Gingersnap Cookies – makes a lot… but I promise. You’ll eat them quickly. Especially if you have kids.


1C of Shortening
1 1/2C of Sugar
2 small eggs
3/8C of Molasses
3C of Flour
1 Tablespoon of Baking Soda
1/2 Teaspoon of Salt
1 Tablespoon of Ginger
1/2 Tablespoon of Cinnamon 


Preheat the oven to 350. Cream shortening and sugar together. Add eggs and molasses. In a separate bowl, mix flour, baking soda, salt, ginger and cinnamon together. Add this mixture little-by-little to the wet ingredients. If the mixture is too sticky, add a bit more flour. (The consistency should be cookie dough-ish.) Have a small bowl of granulated sugar nearby. Take tablespoon-sized bits of cookie dough, roll them into a ball, and roll them in granulated sugar. Place them on a non-greased metal pan. The cookies should bake between 8-10 minutes, or till the edges are set and the tops are cracked. Don’t overcook them.
